Quick, tasty, nutritious dinner…in minutes! (low calorie, high fibre!)



After a lovely but busy day out with the children the last thing you need is the stress of conjuring up a meal. If we are honest most of us would resort to beans on toast or even a take away. Well, you no longer need you have these worries. I have found the answer….Smoky butter beans and greens. On paper you may think it is one of those funny veggie recipes but please trust me, it is delicious!! And for those of you trying to shed a few pounds I will guarantee you will feel full and won’t want to reach for the sugar, chocolate or crisps. Since starting my ‘I am pretending to be a veggie’ campaign I have felt brilliant and so has my 6′ 4″ husband,  who is always hungry!!!

In this recipe there is an underused and underrated ingredient called kale. It is a great source of dietary fibre, plus it contains load of protein, thiamine, iron and folate. If you are looking for a vitamin packed food to keep you well then it also contains Vitamin A, C, K and B6. There is simply nothing not to love about kale. It looks very much like a savoy cabbage with a very dark green leaf and is happiest if steamed gently as in this recipe. It is delicious.

Rinse thoroughly 200g of brown rice, bring a large pan of water to the boil and cook the rice for 20-25mins. Meanwhile wash and roughly chop 200g of kale (or you could use savoy cabbage or chard) then add the kale to a pan with 2tsbp of heated rapeseed oil. Add some salt and pepper and steam with the lid on for 5-6minutes. Next add 3 thinly sliced cloves of garlic cooking until the flavour is released. Follow this with a tin of butter beans (cannellini work well too), rinsed under cold water, stirring until they are cooked through. Finally at the end add half tsp of cumin seeds and 1tsp of smoked paprika with another table-spoon of oil. Allow everything to cook together for a few minutes then serve with the brown rice.
