The most delicious chocolate cakes in the world!!

Health warning – these are not healthy!!It is not my usual type of post but of course a little treat is really, really good for you and your mind!!

I take absolutely no credit for these little delights but what I would say is that you need to make really small cakes using those pretty little cases from the baking aisle in your favourite supermarket. You know the size of a petit-four case. The recipe was taken from ‘After-school meal planner’ by Annabel Karmel.

Ingredients

200g fine dark chocolate

200g caster sugar

200g butter

1 tbsp milk

4 eggs

1 tsp vanilla essence

75g self raising flour

icing sugar

Pre-heat the oven to 180 degrees/Gas mark 4. Break the chocolate into a bowl, and add the butter and sugar plus the tablespoon of milk. Melt over a pan of simmering water or in the microwave, then stir well until all the ingredients are incorporated. Add the eggs, and vanilla and whisk together. Add the flour and mix again. Line your fairy cake tin with your cases and fill each one to about half as they will rise quite considerably. Place in the oven and bake for 10/12 minutes, check with a cocktail stick that they are cooked through. If it comes out clean they are cooked through. When cool dust with icing sugar.

I always advocate baking as being a pleasurable and enjoyable experience, and of course if possible bake with your friend, your son or daughter or even your husband or wife. By being in the kitchen with someone you care for releases all those feel good hormones and at the end of it you can share a delicious cake. Result!!!
